Ingredients:
1 1/2 cups of rice (soft fluffy rice like Jasmin, basmati or glutinous rice would do)
3/4 cup of boiled rice
1 tsp of instant yeast
1 tbs of caster sugar
1 cup of warm water
1/4 baking soda
oil to fry
Directions:
- Soak the rice for about 5 hours (I soaked mine over night for no particular reason).
- Dissolve the sugar in the water and add the yeast, set aside until it starts to froths. Add the yeast mixture plus the baking soda to the soaked rice and boiled rice in a blender and blend until smooth.
- Pour the mixture in a deep bowl and cover with a tea towel and keep in a warm area for about 10 hours. The mixture will double in size.
4. Heat the masa pan and grease with some oil. Fill the holes with batter, don’t fill to the brim. leave some room so you can flip the masa once one side has cooked.
